QUICK PASTA SAUCE

Meal Prep Time:  30 minutes

Serves: 7

Ingredients:

  • 550g mushrooms, diced
  • 1 brown onion, diced
  • 3 medium carrots, sliced
  • 600g zucchini, diced
  • 120g spinach
  • 2 cloves of garlic, crushed and roughly chopped
  • 1 tbsp olive oil
  • 1 X 680g passata
  • 1 Massel Vegetable Stock Cube
    dissolved in 1 cup hot water
  • 1 tbsp paprika
  • 1 tsp salt
  • 1 tsp fennel seeds
    To serve
  • 70g Eco Organics Chickpea Fettuccini
    (from Terra Madre)

Method:

  1. In a non-stick pot, fry the onion with the olive oil and
    salt for 5 minutes, add the garlic and fennel seeds
    and fry for another 3 minutes.
  2. Add the passata, paprika, stock and carrot and
    simmer for 10 minutes.
  3. Add the mushroom and zucchini and simmer
    for another 5-10 minutes.
  4. Cook pasta as per instructions and enjoy!
