SAVORY SWEET CORN CONGEE

Meal Prep Time:  70 minutes

Serves: 6

Ingredients:

  • 1 cup uncooked white rice
  • 2 ears of corn or 1 cup frozen corn
  • 400g brown button mushrooms, sliced
  • 6 cups vegetable stock + 1 cup set aside for later
  • 2 teaspoons ground ginger
  • 1/4 cup soy sauce
  • 3 tbsp sesame oil
  • Salt and pepper to taste
  • 120g Mayver’s protein+ peanut butter
  • 3 spring onions, finely diced
  • 6 tsp sesame seeds

Method:

  1. Rinse rice and place in a pot with 6 cups of
    vegetable stock.
  2. Add the sesame oil, soy sauce, ginger, salt
    and pepper.
  3. Leave to simmer for 40 minutes, stirring often.
  4. Add the sweet corn, mushroom and leave to
    simmer until the rice breaks down fully and
    becomes thick and creamy.
  5. Separate into 6 bowls and top with 1/6th spring
    onion, peanut butter and sesame seedS
