BREAKFAST BANANA BREAD

Meal Prep Time: 60 minutes

Ingredients:

  • 2 medium bananas, very ripe – mashed
  • 1⁄2 nuttelex (or other vegan butter)
  • 1/3 cup black coffee (cooled) or plant-based milk
  • 2 cups wholemeal flour
  • 1/3 cup brown sugar
  • 3 tablespoons chia seeds mixed in 6 tablespoons
  • water (makes 3 chia seed eggs)
  • 2 serves (80g) Bondi Protein Co – Vegan
  • 2 teaspoons baking powder
  • 1⁄2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1⁄2 teaspoon ginger powder

Method:

  1. In a bowl beat the brown sugar and butter together until fluffy.
  2. Slowly add the chia seed eggs.
  3. Add the banana and coffee or milk.
  4. Sift in all the dry ingredients and fold together.
  5. Bake in the oven at 180 degrees for 30-40 minutes.
  6. Let cool and then turn out and slice into 11 portions.
