VEGETABLE QUICHE

Serves: 4

Ingredients:

  • 4 eggs, beaten
  • 100ml milk of choice
  • 1 sheet Woolworths puff pastry
  • 30g cheese of choice, grated
  • 1 medium carrot, diced
  • 1 medium zucchini, diced
  • 1/2 red capsicum, diced
  • 1 large flat mushroom, diced
  • 1 tsp minced garlic
  • Pinch of salt

Method:

  1. Blind bake the pastry in an oven proof quiche dish at 180 for 10-15 minutes. 
  2. Cook all the veggies in a non stick pan until soft.
  3. Beat the eggs with the milk and stir through the cheese
  4. Pour into the pastry with the vegetables.
  5. Cook at 180 for 20-30 minutes or until firm to touch in the middle and pastry is golden.
