Wholesome ANZAC Bisuits

What is not to love about Anzac biscuits? Buttery and sweet with a slight zing from the bicarb soda. Traditional recipes will have you using both sugar and golden syrup, white flours and a stack of butter and while DELICIOUS, the same result can be achieve by making a few cleaver substitutions.
 

The recipe below will achieve the same chewy and crunchy result with significantly fewer calories. Depending on your sweet tooth, you cold also look to half the amount of brown sugar or use maple syrup instead of honey if you prefer the taste.

Ingredients

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup wholemeal spelt flour
  • 1/4 cup brown sugar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup honey
  • 2 – 3 tablespoons hot water
  • 1/4 teaspoon bicarb soda
Method

1. Preheat oven and line a baking tray with baking paper.

2. Combine all ingredients in a large bowl, except hot water and stir until combined

3. Add a little water at a time to ensure the right consistency.

4. Divide biscuits into balls on a tray and press down.

5. Bake for 20 – 25 minutes until golden.
